  • Reflection Question
    Simplicity Core Values
What are your top 3-5 core values? How did you narrow it down to those as being your core values?

Integrity. Healthy Relationships. Service. I narrowed my core values down over a lifetime of discovering what matters most to me. Integrity has to be at the center of everything I do. If I am not honest and genuine, nothing else will work right. That starts with me. I can control that. Relationships is next because after what I can do, other people are next. Service is how I can strengthen relationships and ultimately become my best.
  • Reflection Question
    Nature Explore My Area
How might spending more time outdoors enhance your brainpower?

Exercise, fresh air and down time clear the mind and increase brain capacity.
  • Reflection Question
Nature Go for a Daily Walk
How do you experience your neighborhood or city differently when walking instead of driving?

    Michael Simpson's avatar

You actually meet people and can enjoy the sights, sounds and smells better.
  • Reflection Question
    Health More Fruits and Veggies
How does eating more fruits and vegetables and less meat positively affect yourself, other people, and our planet?

    Michael Simpson's avatar
    Michael Simpson 4/09/2021 12:55 PM
Fruits and vegies are healthier for the body and the planet. I hope enough people can make that a part of their way of life so that it improves our world for the next generation.
  • Reflection Question

Morning exercise combined with meditation and a healthy whole food diet are my basics.
  • Reflection Question
    Food Visit A Local Farm
How do our current food growing and manufacturing processes affect our future and the future of Earth?

    Michael Simpson's avatar
    Michael Simpson 4/09/2021 12:52 PM
Big corporate farms are not as responsible with the environment. Local small farmers use more earth friendly, sustainable processes. Support your local small grower!
  • Reflection Question
    Health Exercise Daily
How can you incorporate other personal values (like quality time with friends or spending time in nature) into your exercise routine?

    Michael Simpson's avatar

I go walking with family members and we have great conversations. Building healthy relationships is important to me.
  • Reflection Question
    Food Whole Food Lifestyle
Michael Pollan states that “it is better to pay the grocer (our edit: or the farmer!) than the doctor.” What are your thoughts on this assertion?

    Michael Simpson's avatar
    Michael Simpson 4/09/2021 12:35 PM
Agreed! The farmer charges much less than the doctor for poor food choices. It is an investment in the future health of your body, the community and our environment.
  • Reflection Question
    Food Zero-Waste Cooking
In North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for using every part of a vegetable. How can you incorporate using an entire vegetable (including the skins, tops, stalks, etc.) during your next meal prep?

    Michael Simpson's avatar
    Michael Simpson 4/09/2021 12:33 PM
I put whole vegetables in my soups and stews, including skins, tops and stalks. The added flavors and textures are great as well as the increased food value in nutrients and anti oxidants.
  • Reflection Question
    Food Weekly Meal Planning
An average American throws out about 240 lbs of food per year. The average family of four in the US spends $1,500 a year on food that they throw out. Does this surprise you? Where would you rather use this money?

    Michael Simpson's avatar
    Michael Simpson 4/09/2021 12:30 PM
I'm not surprised by the average amount of food waste or the cost. I have lived in foreign countries where food is precious and I can donate the money I save to help feed children in other parts of the world. My mother was right when she told me there were hungry children in other parts of the world.
